The party can't start until the tequeños arrive: fingers of white cheese wrapped in a thin dough spiral and fried crisp and golden.
Ingredients
- 1 lb firm white cheese, cut into sticks
- 3 cups flour
- 1 egg
- 3 tbsp Iberia Extra Virgin Olive Oil Blend 51 oz
- 3/4 cup water
- oil for frying
Method
- Make a dough with flour, egg, Iberia Olive Oil, water, and a pinch of salt; knead smooth and rest 30 minutes.
- Roll thin and cut into long strips.
- Wrap each cheese stick in a spiral of dough, sealing the ends.
- Fry in hot oil until golden and crisp.
- Drain and serve hot with dipping sauce.
