Ingredients

  • 2 large whole prawns
  • 1 medium onion
  • 2 bay leaves
  • 4 ounces Iberia White Wine
  • 3 tbsp . Iberia Minced Garlic
  • 1 pound seafood (shrimp, squid, oysters, cooked octopus, macha and clams)
  • 2 large mussels with carapace
  • 2 ounces dried shrimp tails
  • to taste ½ oz Annatto
  • 1 spoon yellow pepper pasta
  • 2 tsps. sweet paprika
  • 1 cup fish or chicken stock
  • 1 ají panca peruano (or another type of hot pepper or chili) (optional)
  • to taste ½ tbsp. oregano
  • 3 tsps. Iberia Olive Oil
  • to taste salt to taste

Method

  1. In a pan put the Iberia oil for frying, garlic, tomato or sweet peppers, onion, white wine, oregano, the yellow hot pepper, and shrimp tails.
