From the Iberia kitchen — main dishes, built around what Gustavo keeps on the shelf.
Ingredients
- 2 large whole prawns
- 1 medium onion
- 2 bay leaves
- 4 ounces Iberia White Wine
- 3 tbsp . Iberia Minced Garlic
- 1 pound seafood (shrimp, squid, oysters, cooked octopus, macha and clams)
- 2 large mussels with carapace
- 2 ounces dried shrimp tails
- to taste ½ oz Annatto
- 1 spoon yellow pepper pasta
- 2 tsps. sweet paprika
- 1 cup fish or chicken stock
- 1 ají panca peruano (or another type of hot pepper or chili) (optional)
- to taste ½ tbsp. oregano
- 3 tsps. Iberia Olive Oil
- to taste salt to taste
Method
- In a pan put the Iberia oil for frying, garlic, tomato or sweet peppers, onion, white wine, oregano, the yellow hot pepper, and shrimp tails.
