Method

  1. Soften the onion and garlic in the oil with the thyme.
  2. Add the beans with their broth and the coconut milk; simmer 5 minutes to marry.
  3. Stir in the rice, add the water, and season with salt.
  4. Boil until the liquid meets the rice, then cover, lower, and steam 20 minutes.
  5. Rest 5, fluff from the bottom, and serve — with fried fish and tajadas if the coast is calling.
