The Garifuna coast's masterwork: red beans and rice cooked together in coconut milk until every grain carries the Caribbean. Honduras inland stews its beans — the coast crowns them.
Ingredients
- 2 cups Iberia Parboiled Rice 5 lbs
- 2 cups Iberia Red Kidney Beans W/S 15 oz
- 1 can Iberia Coconut Milk 13.5 oz
- 1 small onion, minced
- 2 cloves garlic, minced
- 1 sprig fresh thyme
- 1 tbsp Iberia Extra Virgin Olive Oil Blend 51 oz
- 1 cup water
- to taste salt
Method
- Soften the onion and garlic in the oil with the thyme.
- Add the beans with their broth and the coconut milk; simmer 5 minutes to marry.
- Stir in the rice, add the water, and season with salt.
- Boil until the liquid meets the rice, then cover, lower, and steam 20 minutes.
- Rest 5, fluff from the bottom, and serve — with fried fish and tajadas if the coast is calling.
