From the Iberia kitchen — dinner, lunch, built around what Gustavo keeps on the shelf.
Ingredients
- 1 tbsp Iberia Organic Extra Virgin Olive Oil
- 1 tbsp Iberia Minced Garlic with EVOO
- 1 tsp Iberia Total Seasoning
- 2 cups Doñarepa Precooked White Corn Flour
- to taste 2½ cups warm water
- 1 tsp salt
- 2 cups shredded leftover turkey
- to taste Fresh cilantro or parsley (optional, for garnish)
Method
- Combine warm water, salt, and Doñarepa flour in a bowl. Mix and knead lightly until smooth. Let rest.
- Divide dough into 6 to 8 balls and flatten into discs.
- Heat a skillet with Iberia Organic Extra Virgin Olive Oil and cook arepas for 4 to 5 minutes per side until golden.
- In a bowl, mix turkey with Iberia Mayonnaise, Iberia Minced Garlic with EVOO, Iberia Onion Powder, Iberia Total Seasoning, and Iberia 100 Percent Lemon Juice. Adjust seasoning.
- Slice arepas open and stuff with the turkey mixture. Garnish with fresh herbs.
