Nicaragua's painted rooster — day-old rice fried into small red beans until every grain is speckled. Across the border they make it with black beans and claim they invented it. They are wrong, says Managua.

Method

  1. Heat the oil in a wide pan until it shimmers; soften the onion and pepper.
  2. Add the beans and fry 3-4 minutes, letting some blister and pop.
  3. Add the rice and a few spoonfuls of bean broth; fry, folding, until the rice is stained red-brown — pinto, painted.
  4. Press flat and let the bottom crisp one minute. Fold once more.
  5. Serve with eggs, crema, maduro, or all three. In Nicaragua this is breakfast, lunch, and an argument-winner.
