Method

  1. Soften the onion and pepper in the oil.
  2. Add the beans with a few spoons of broth and the salsa; simmer 2 minutes.
  3. Fold in the rice and fry until evenly speckled and heated through.
  4. Finish with cilantro.
  5. Serve with eggs, natilla, and coffee — and if a Nicaraguan friend objects to the black beans, smile. Pura vida.
