Method

  1. Crisp the bacon and sausage in Iberia Olive Oil; remove.
  2. Scramble the eggs in the fat, then set aside.
  3. Soften the garlic, add the collards, and wilt.
  4. Stir in the drained Iberia Black Beans to warm through.
  5. Sprinkle in the cassava flour and toss until it toasts and coats everything.
  6. Fold the meats and egg back in; season and serve.
