A Minas Gerais classic: beans tossed with toasted cassava flour, bacon, sausage, collards, and egg into a hearty, rib-sticking skillet.
Ingredients
- 2 Iberia Black Beans W/S 15 oz
- 1 cup cassava flour (farinha)
- 6 oz bacon, chopped
- 6 oz sausage, diced
- 3 eggs
- 2 cups collard greens, shredded
- 4 cloves garlic
- 2 tbsp Iberia Extra Virgin Olive Oil Blend 51 oz
Method
- Crisp the bacon and sausage in Iberia Olive Oil; remove.
- Scramble the eggs in the fat, then set aside.
- Soften the garlic, add the collards, and wilt.
- Stir in the drained Iberia Black Beans to warm through.
- Sprinkle in the cassava flour and toss until it toasts and coats everything.
- Fold the meats and egg back in; season and serve.
