Method

  1. Soften the onion, garlic, and pepper in the oil until sweet.
  2. Add the beans with a few spoons of their broth and let them bubble 2-3 minutes.
  3. Fold in the rice and the cumin, and fry together, stirring, until the rice drinks the bean broth and takes its color — the marriage.
  4. Let the bottom catch ever so slightly. That crust is the good part.
  5. Serve with crema, cheese, avocado, or a fried egg — or tucked beside everything else on the plate.
