Method

  1. Boil the yuca until completely tender, 20-25 minutes. Remove the woody core and mash smooth while warm. Season with salt.
  2. Brown the beef with the onion, garlic, Sazon, Adobo, and tomato paste until deeply seasoned and dryish. Cool.
  3. With oiled hands, flatten a ball of yuca dough, spoon in the filling, and seal into a torpedo.
  4. Fry in medium-hot oil, turning, until deep golden and crisp, 4-5 minutes.
  5. Drain a moment and serve hot — coffee on the table, morning or not.
