Chicken browned in caramelized sugar then braised with peppers, thyme, and allspice into a glossy brown gravy — Jamaican comfort food at its finest.
Ingredients
- 3 lbs chicken pieces
- 2 tbsp brown sugar
- 1 onion
- 1 bell pepper
- 1 tbsp thyme
- 1 scotch bonnet
- 3 cloves garlic
- 1 tsp allspice
- 3 tbsp Iberia Extra Virgin Olive Oil Blend 51 oz
Method
- Season the chicken with garlic, thyme, allspice, and salt; rest 1 hour.
- Caramelize the sugar in Iberia Olive Oil until dark, then brown the chicken in it.
- Add onion, pepper, the whole scotch bonnet, and water to make a gravy.
- Cover and simmer 35 to 40 minutes until tender.
- Reduce until glossy and serve with rice and peas.
