Method

  1. Season the chicken with garlic, thyme, allspice, and salt; rest 1 hour.
  2. Caramelize the sugar in Iberia Olive Oil until dark, then brown the chicken in it.
  3. Add onion, pepper, the whole scotch bonnet, and water to make a gravy.
  4. Cover and simmer 35 to 40 minutes until tender.
  5. Reduce until glossy and serve with rice and peas.
