Colombia's beloved two-ingredient genius: a slice of guava paste, a slice of fresh white cheese, eaten together so the sweet and the salt argue and both win. The lunchbox of every Colombian childhood.
Ingredients
- 1/2 brick Iberia Guava Paste Brick 14 oz
- 8 oz queso fresco or queso campesino, sliced
- water crackers (optional)
Method
- Slice the guava paste into half-inch slabs.
- Cut the cheese into slices of the same size.
- Pair one of each — cheese under, guava on top. On a cracker if you like structure.
- Eat standing in the kitchen like everyone actually does. Repeat.
- For the warm version: tuck the pair into a hot arepa or melt briefly under a broiler until the cheese softens.
