Honduras' beloved fold: a soft flour tortilla around refried red beans, crema, and crumbled cheese. Three ingredients, one perfect street food — the whole country's late-night answer.
Ingredients
- 8 thick flour tortillas (the soft, handmade kind)
- 2 cups Iberia Red Kidney Beans W/S 15 oz
- 3/4 cup crema (mantequilla hondureña)
- 6 oz queso duro, crumbled
- 2 tbsp Iberia Extra Virgin Olive Oil Blend 51 oz
- optional scrambled egg, avocado, plátano frito — the 'baleada con todo'
Method
- Warm the refried beans with the olive oil until they spread like silk.
- Heat each tortilla on a dry comal until soft, blistered, and floppy.
- Swipe a generous stripe of beans down the middle.
- Crema over the beans, cheese over the crema. Add egg, avocado, or plantain if you're going 'con todo'.
- Fold once and eat from the end, standing up, like the baleada intends.
