Method

  1. Warm the refried beans with the olive oil until they spread like silk.
  2. Heat each tortilla on a dry comal until soft, blistered, and floppy.
  3. Swipe a generous stripe of beans down the middle.
  4. Crema over the beans, cheese over the crema. Add egg, avocado, or plantain if you're going 'con todo'.
  5. Fold once and eat from the end, standing up, like the baleada intends.
